So you may have noticed that we recently changed a few things in the cafe. Namely, the way we brew coffee. We now brew all coffee to order. The are multiple reasons for this change and I am going to take a bit of time to explain them. These are in no particular order.
Quality
By brewing every cup of coffee to order we are inherently crafting a better cup of coffee each time. Your coffee hasn’t been sitting in an airpot for a lengthy period of time, it wasn’t made in a larger batch, it was made carefully, specifically, for you.
We also tweaked our brewing parameters. We are now brewing by weight. We weigh out the amount of coffee needed, grind, then weigh the amount of water added. We do this because it is precise and again, creates a better cup of coffee each time.
No Waste
Brewing to order allows us to eliminate virtually all waste in brewing coffee. When we brewed in larger batches, if that coffee reached a certain age (45min-1hour) it was dumped. No waste is better for cafe operations, your coffee, and our sanity.
Choice
You now have multiple choices of what coffee you would like to enjoy. We give you a menu and you make your selection. There is no more “coffee of the day” or “house coffee”. This allows you the freedom to explore different origins at your leisure and further develop your pallete. As education is an important aspect of our business, we feel this choice allows for more conversation about coffee and its preparation.
Each coffee we serve comes from somewhere. In our eyes there is no “regular coffee”. Someone’s hands carefully cultivated it, processed it, packed it, shipped it, and roasted it. What kind of service would we be doing that coffee or that long line of people who have cared for it before us if we absent mindedly threw it in a drip machine? None. As baristas we are the end of that long line. We don’t take that lightly. That is an honor. We want to respect our coffee and those people before us and we feel brewing to order is doing just that.
